A new study published in the Journal of Lipid Research suggests that soybean oil — the most widely consumed cooking oil in the United States — may directly contribute to obesity. The effect appears linked to how the body processes one of its major fatty acids.

How Soybean Oil Affects the Body
Researchers fed mice a diet high in soybean oil and monitored how they metabolized linoleic acid, an omega-6 fat that makes up a significant portion of the oil.
Linoleic acid breaks down into compounds called oxylipins, and high intake of linoleic acid increases oxylipin production. Certain oxylipins were found to be strongly linked to weight gain in mice.
“This may be the first step toward understanding why some people gain weight more easily than others on a diet high in soybean oil,” said Sonia Deol, biomedical scientist at UC Riverside.

Genetic Differences May Influence Weight Gain
To investigate further, researchers studied genetically engineered mice carrying a modified version of the liver regulatory gene P2-HNF4α.
This gene reduces the activity of enzymes that convert linoleic acid into oxylipins — enzymes also found in humans.
Both modified and normal mice were fed the same soybean-oil diet. By the end of the study, genetically altered mice had healthier livers and gained significantly less weight than normal mice.

The Role of Oxylipins in Fat Accumulation
The research team identified specific oxylipins made from linoleic and alpha-linolenic acids that were highly elevated in mice that became obese.
These findings suggest that the body’s internal processing of linoleic acid may be a key factor in weight gain — not just calorie intake.
A Caution for Extrapolating to Humans
Because the experiment was conducted entirely in mice, the authors stress that the results cannot be directly applied to humans.
However, the study introduces a potential biochemical mechanism explaining why diets high in soybean oil may drive fat accumulation in animal models.
